David Waltuck to Open Élan
Chef and restaurateur David Waltuck has announced plans to open a new restaurant called Élan on 20th Street, just south of the NoMad District.
Waltuck may be remembered for his work as chef and owner of Tribeca’s Chanterelle, the French restaurant that had a 30-year run and was widely thought of as one of the city’s finest dining establishments, before closing in 2009.
For the new restaurant, Waltuck is partnering with George Stinson, the former general manager of Chanterelle.
Waltuck hesitates to give a label to Élan’s upcoming menu, but as he told Eater.com, “It will be my food… I guess you could call it contemporary cuisine rooted in classic French technique.”
Élan will be located at 43 East 20th Street between Broadway and Park Avenue, in the former Veritas space, which closed late last year. The new venture does not have specific launch date yet, but Waltuck says you can expect the opening within a few months.
